Zucchini, Almond and Black Bean Burger’s with Caramelised Onions

Yep sometimes a girl just needs a burger, but what a girl doesn’t want is all the saturated fats, sugars, bread and heaviness consuming a burger also provides! Insert this lil bad boy, seriously omggggg! this burger is the best and what makes it even better it’s totally meat free and you won’t miss it what so ever trust me!! Serve it with a side of my sweet potato wedges and Booooommm, fast food without the fast food guilt and kilos, happy as :)

 

1 large zucchini grated (squeeze excess liquid from the zucchini after grating)

1 cup of black beans (cooked or tinned)

2 eggs lightly beaten

1 tbls chia seeds

1/4 cup almond meal

1/4 cup of buckwheat flour

1 garlic glove crushed

1 tsp turmeric powder

2 spring onions finely chopped

Salt and pepper to taste

2 large field mushrooms

1 red onion

1 tbls maple syrup

¼ avocado mashed

Sliced beetroot

 

Directions

Preheat oven to 180 degrees place washed and clean mushrooms on a baking tray and lightly spray with coconut oil cooking spray, place them in the oven and cook for approx 20 mins or until soft and cooked through, whilst the mushrooms are cooking you can start making the patties and caramelised onions, finely slice the red onion and put it aside, place the grated zucchini in a large mixing bowl, add the beans, spring onions, turmeric, garlic and salt and pepper and mix well, add the beaten eggs and buckwheat flour and stir the mixture until everything is well combined, form the mixture into 4 patties, spray a nonstick frying pan with coconut oil and place on a medium heat, cook 2 patties at a time, cook for 2 minutes or until golden on one side flip over and cook for a further minute or until both sides are well cooked and golden, to cook the onions heat a small nonstick pan over a medium heat sprayed with coconut oil, place the onions in the pan and cook until soft, add the maple syrup and cook for a further minute until brown and cooked well, take the cooked mushroom’s out of the oven and place them on a plate to rest for a minute to release their juices, place each mushroom onto serving plates, and start stacking baby, woooooo this is the fun part, get creative and stack it how ever you like, or follow my lead either way it’s going to taste amazing!!! I've served the burger with some baked sweet potato wedges for a little extra touch of awesomeness!!
