Makes 6-8 pancakes Serves 2
1 large banana
1⁄2 cup quinoa flakes
3 whole eggs
1 tsp. baking powder
1 tbsp. spelt flour
1⁄2 tsp. vanilla bean paste 1⁄2 tsp. cinnamon powder
1⁄2 cup of fresh strawberries sliced
1⁄2 cup of Greek or coconut yogurt to serve
Place all the pancake ingredients into a blender and blend until the mixture is well combined and thickish. Heat a non-stick frying pan over a medium heat and spray it with cooking spray, pour desired amount of batter to make your pancake. Cook until bubbles start to form around the edges flip over and cook on the other side until golden. Repeat until all the batter is finished.
Now it’s time to get creative! let’s get stacking :) use 2 serving plates, lay one pancake on each plate and spoon on some yogurt and strawberries. Repeat with each pancake until you’ve formed your pretty little stacks, top each stack off with a generous spoon of yogurt and a strawberry. Eat straight away (as if you can wait anyways hehe).
