Stir Fry Asian Mushrooms, with Chilli and Basil

I've got Sooooo Mush room in my heart for this yummo creation!!

Perfect for veggo's or for you meat eaters that want a lil change. Mushrooms are jam packed with body lovin goodness, they are high in  anti oxidant's, minerals and vitamins, they contain anti-cancer, anti-bacterial, anti-viral and anti-fungal properties and are another fab meat free alternative to get your protein fix, Winning ;)

Their are so many Fungi to experiment with, my Fav, the Shiitake, with all their wonderful healing properties and yummy taste,

So don't by pass these babies next time you're getting your weekly veggies, try a lil something different this week, your beautiful bod and taste buds will thank you for it xx

Ingredients              Serves 2

3 cups Asian mushrooms, of your choice, (Found in good veggies shops or Asian grocery stores)

1 large spring onion

1/2 cup of fresh basil leaves

1 large green chilli

1 tsp red chilli flakes

1 clove of garlic

1 tsp fresh ginger

1 tsp sesame oil

1 tbls tamari sauce

Directions

Heat a medium sized non stick frying pan or wok over a medium heat, spray the pan with some coconut oil spray, add the spring onion and cook until softened, add add the mushrooms and cook for 1 minute, add the remaining Ingredients and cook for a further 2 -3mins, or until soft.

Eat like this, or serve with some steamed rice, but it's perfect just the way it is, enjoy xx
