Stir Fry Asian Mushrooms and Zucchini Noodles in a Miso, Ginger and Sesame Broth

Gut healing, nourishing, protein packed, nutrient dense and low carb, are just a few amazing health benefits this lil bowl of awesomeness contains. I adore Asian mushrooms, being a very minimal meat eater I'm always conscious about getting enough protein, Iron and B vitamins into my diet. Tick, tick, tick, these magical fungi tick all those boxes and oh so many more! Not to mention how amazing they are for your Immune system and for preventing some cancers and heart disease, If you haven't tried them out as yet, this recipe is the perfect place to start, yummmmmmm xx

 

Ingredients                                                     Serves 2

1 large zucchini - spiralized into noodles

2 cups of mixed Asian mushrooms, (Shiitake, oyster, enoki and eryngii have been used in this.)

1 spring onion finely sliced

1/2 cup of firm tofu diced

1 tbls fresh miso paste

2 tsp ginger finely grated 

2 cloves of fresh garlic

3 tsp sesame oil

1 tbls tamari sauce

Directions

Heat a non stick pan over a medium heat, add 2 tsp of sesame oil and the mushrooms and cook until just tender, remove from the pan, add the tofu and cook until lightly browned, add the zucchini noodles, garlic, spring onion and tamari sauce and cook until tender, add the cooked mushrooms and mix well, in a large heat proof bowl add the miso paste, sesame oil, grated ginger and 2 cups of boiling water, stir until the miso melts. In 2 serving bowls, divide the stir fried veggies and gently pour the miso broth on top, sprinkle with some toasted sesame seeds and enjoy xx YUMMMMMM :)
