Spicy Raw Vege and Tuna Rice Paper Rolls

So fresh and light, these rice paper rolls make a wonderful lunch or dinner that the whole family will enjoy, get creative and add what ever you like to these rolls but here's a few fillings in enjoy :)

Ingredients       Serves 2

4 rice paper rolls

200grams of tinned tuna

1/2 tsp chilli flakes

1 tsp tamari sauce  

1/2 tsp sesame oil

1 tsp raw honey

2 tsp crushed peanuts

2 cups of finely sliced raw vegetables, I've used red cabbage, carrots,red capsicum, spring onions and green beans, feel free to add some of your own favourites to the mix

Directions

Mix tamari sauce, sesame oil, honey and chilli flakes into a bowl, give it a good mix and add the tuna stir through and make sure the tuna is well coated, set aside, finely slice all of the vegetables, take each rice paper and slightly wet it under water and place it on a wet towel until they become soft and ready for rolling, i like to 2 a roll at a time so the paper doesn't stick to each other, divide the tuna and vege slices into 4 portions place the filling in the centre sprinkle each roll with some crushed peanuts then fold the bottoms over the filling and fold each side over and roll tightly to secure the filling in tightly repeat for all four rolls then cut in half and serve straight away.
