Spicy Mexican Black Bean and Quinoa Soup!

Soup perfection right here!! With my spicy Mexican black bean and quinoa soup!!!! The girl loves her some Mexican and this bowl of awesomeness ticks all the boxes without loading the body with extra nasties and unwanted calories!! This hearty bowl with satisfy and nourish the entire family!! Weeeeeee xx

Ingredients

1 Spanish onion

1 large capsicum 

1 cup corn kernels 

3 shallots 

1 cup of fresh coriander 

2 tins of diced tomato 

1/4 cup dried quinoa 

1 tin of black beans (rinsed and drained)

1 litre of vegetarian stock

2 tsp dried chilli flakes (Optional)

2 tsp of Cumin powder

2 tsp of Smoked paprika 

2 tsps salt

3 cloves garlic

Greek yogurt, coriander and shallots for garnish

 

Directions 

Place a large pot over a medium heat, add 1 tbls of olive oil, add onion and garlic and cook until softened, add capsicum and cook until soften, add corn kernels and stock and reduce the heat to a slow simmer, add the dry quinoa, tinned tomatoes and all of the herbs and spices and let simmer for approx 15minutes, add the black beans, coriander and shallots, cook for a further 5 minutes then serve, top with some greek yogurt and some fresh coriander and shallots, enjoy xx
