Spicy Harissa Chickpea & Sweet Potato Patties with a Beetroot and Orange Dip

Totally Yummmm and moreish, these patties are amazing so amazing in fact you won't even miss the lack of meat in them! Totally Vegetarian and totally perfect, then you add the dip and Boommm perfection has hit another level!! Even the biggest meat eaters will love this creation, I promise ;)

Ingredients (Patties)

1 1/2 cups of cooked sweet potato (Cooled)

1 cup of cooked or tinned chickpeas, drained and rinsed

1/2 cup chickpea flour

2 eggs lightly beaten

1/4 cup of fresh coriander

2 spring onions finely chopped

1 tsp harissa powder

1 tsp garlic powder

Salt and pepper to taste

 

Directions

In a large mixing bowl place the cooked sweet potato and gently mash it, you don't want it smooth just roughly mashed, add the chickpeas and mash them also, add the flour and eggs and mix until it all comes together, add the spices, spring onion and coriander and stir until it's all well combined, form into patties, heat a non stick pan over a medium heat, spray the pan with cooking spray and place 2 or 3 patties in at a time, don't over crowd the pan, cook for 2 minutes or until golden, flip the patties over and cook for a further minute or until brown on both sides, repeat until all patties are cooked. Serve with the Beetroot and orange dip and some fresh rocket! Yummmmm :)

Roasted beetroot and orange dip

 

Ingredients

 

2 large beetroots

1 clove of garlic

½ red onion sliced

½ tsp cumin powder

2 tbsp of tahini

½ orange juiced

½ tsp of orange zest finely grated

pinch of salt and pepper

 

Directions


Preheat the oven to 180 degrees. Peel and dice the beetroot and place it on a baking tray that’s been lined with baking paper. Place in the oven and cook for 15 minutes, take the tray out and add the sliced red onion and the garlic to the tray and bake for a further 15 minutes or until the beets are tender, allow to cool right down. Once cooled, place all of the ingredients into a food processor and blend until it all becomes smooth and well combined.
