Spiced Apple & Brazilian Nut Crunch Chia Seed Pudding

Ingredients Chia Seed Pudding                    Serves 4

1/4 cup chia seeds

1 cup of coconut or almond milk 

1/2 tsp cinnamon powder

1 tsp vanilla bean paste

Ingredients Spiced Apples

2 granny smith apples

1 tbsp of raisins

1 tsp cinnamon powder

12tsp of ginger powder

2 tbls water

1 tsp lemon juice

2 tbls desiccated coconut

8 Brazilian nuts

 

Directions

In a large jar or container add all of the chia seed ingredients together and either shake (If in a jar) or mix well with a folk and continuously for a couple of minutes to break up the chai seeds which avoids the seeds clumping, place in the fridge for approx an hour to set, over night works even better.

Peel, core and dice the apples, place them along with the cinnamon, ginger, water and lemon juice into a medium pot, place over a medium heat and gently bring to the boil, stir occasionally and cook for approx 5 minutes or until the apples are tender. Remove from the heat and let cool until chia seeds are set.

Roughly chop the nuts and mix them together with the coconut, serve set chia seeds in a serving bowl, topped with the spiced apples and a good sprinkle of the Brazilian nut and coconut crunch, yuummm, enjoy xx
