Sliver Beet and Ricotta Slice

I love this slice one because it's super easy to create, two because it's super yummy and can be eaten any time of the day and thirdly it's jam packed with nutrients, protein, good fats and carbs and plenty of vitamins, minerals and fibre, all things that my body loves, wants and needs! Booommm :) Even the biggest of meat eaters are satisfied with this creation, helloooo meat free monday!

Ingredients                                                                        Serves 4 large servings

1 large onion

2 cloves of garlic

1 large bunch of silver beet, washed and chopped

400 grams of fresh ricotta cheese

10 whole eggs

1/4 cup of almond milk

1 tbls of basil pesto

salt and pepper to taste

Directions

Preheat your oven to 180 degrees, lightly spray a medium sized baking dish with coconut cooking spray, lightly spray a large frying pan with cooking spray and cook the onions until soft, add the silver beet and garlic and cook until it starts to wilt, sprinkle with salt and pepper and place the mixture into the baking dish, crack each egg into a large mixing bowl and whisk until the eggs are separated, add the milk, pesto and whisk until the mixture is well combined, crumble the ricotta on top of the silver beet mix then pour egg mixture on top, place the baking dish into the oven and cook for approx 25mins or until golden on top. This makes great left overs for lunches the next day and will last up to 3 days in the fridge, Enjoy xx
