Seedy spiced brown rice nourishing bowl

Nourishment at it's very finest, Nutrient Dense, fibre packed and yummo, who said eating healthy and nourishing had to be bland or boring??? Not here!! Enjoy xx

Ingredients        Serves 2

1 cup cooked brown rice

1/4 cup of seeds

(I use a mixture of pepitas, sunflower seeds and sesame seeds)

2 Tbls chopped almonds

1 garlic clove

1/2 tsp cumin powder

1/2 cup fresh herbs ( I use coriander or parsley, but whatever you like)

1 spring onion finely sliced


Topping Ingredients

(which can be altered as much or as little as you like)

1 bunch of asparagus

1 large zucchini sliced

1/2 small block of haloumi

Kimich or other fermented foods



Heat a large griddle pan over a medium heat and spray lightly with cooking spray Wash, cut and slice the asparagus, zucchini and haloumi, add the zucchini cook for approximately 2 mins or until golden, flip them over and cook until both sides are tender and golden, repeat until all zucchini is grilled, add the asparagus and cook until tender, lastly had the haloumi and cook until browned and tender on both sides, set all grilled pieces aside, cover with foil to keep warm.


Heat a nonstick pan over a medium heat, add a small amount of coconut oil, and add the garlic & spring onion cook under the garlic is tender, add the seeds & nuts and cook for a couple of minutes until the seeds are lightly toasted, add the rice, cumin powder and salt and pepper, cook for another few minutes until the rice is heated throughly.


Place rice in 2 serving bowls and top with grilled veggies and toppings of your choice, get creative and have fun building your very own nourishing bowl 🍲

I’ve used grilled zucchini and asparagus, haloumi slices & kimichi to top the rice in this creation, prawns or grilled chicken could also be used or for a vegan option marinated tofu or tempeh could be used as an alternative, seriously anything can be added, just keep it nourishing and yummy 😋
