Satisfying Winter Wonder Soup

So it's FREEZING!!!!! So far from Aloha weather right now :( Keeping warm without the kilos creeping on can be a bit of a challenge for many this time of the year! This soup not only ticks all the boxes with providing your body with nutrients, vitamins, protein and good carbs, it ticks the most important box for this time of year, SATISFYING ;) I've heard many people say soups aren't filling and that they find it hard to eat veges this time of year! Well here's your answer to both of these questions! I'm a total freestyler when it comes to cooking and I encourage you to be the same, add veges and beans that you love to keep it interesting xx

Ingredients 

1 litre of Vegetable stock

1 large onion

2 cups of mixed veges, (use your favourite's, I love to use what's in season this time of year carrots, celery, cabbage, cauliflower and fennel are my favourites for this soup)

2 tin's of diced tomatoes

1 cup of beans of choice, (I've used chickpeas but black beans also are great in this recipe)

1/2 cup of quinoa 

1 tbls macadamia oil

2 cloves of crushed garlic

1 bunch of fresh parsley chopped

salt and pepper to taste

Directions

Using a large cooking put, heat the oil on a medium heat and add the onions and garlic, cook until lightly browned add the chopped vege mix and stir, add the stock, salt and pepper and let it all simmer for 10 minutes, add the diced tomatoes and stir well, add the dry quinoa and reduce the heat to gentle simmer and cook for a further 10 minutes or until the quinoa is tender, add the beans and mix well, place the lid on the soup and let it rest for approx 10 minutes before serving, So perfect as it is and super filing, serve with a sprinkle of fresh parsley, enjoy xx
