Raw Slaw with a Tangy Coconut and Peanut Dressing

Why do I love Raw foods, where does a girl start?? Eating the raw foods have loads of health benefits, It helps to improve digestion, gives you wonderfully clear and vibrant skin, provides your body with vitality, nutrients, vitamins and enzymes, gives you some seriously kick A$$ energy and it assists in weight loss! So what's not to love?? I love it even more this time of year because yes it's the silly season and there will be more treats and drinks consumed by most of us, so by eating more whole and raw foods on the whole will balance out those sneaky lil santa treats. It's all about balance baby, So eat drink and be merry but also nourish your body well xx

 

Ingredients salad

1 cup of shredded savoy cabbage

1/2 cup of shredded purple cabbage

1 large carrot grated

1 celery stalk sliced

1/2 red capsicum sliced

1/2 cup bean sprouts

1/2 cup raw corn kernels

1/4 cup chopped coriander 

1/4 cup chopped mint leaves

1 green apple finely sliced

Ingredients dressing

1/4 cup coconut milk

2 tbls crunchy peanut butter

1/2 tsp curry powder

1/2 tsp garlic powder

1 tbls tamari sauce

juice of one lime

1 tbl maple syrup

salt to taste

Directions

Place all of the salad dressing ingredients into a small mixing bowl and whisk well until it all comes together and is well combined, set aside, sliced, shred and dice all of the salad ingredients, place them all into a large mixing bowl and stir, drizzle the dressing over the salad and mix until everything is well coated, serve up and enjoy! Weeeeee xx
