Raw Coconut and Cacao Slice

Heaven is exactly what this little slice of awesomeness is!! By far my favourite raw creation, I have a massive sweet tooth and this lil baby hits the spot without the nasties you will find in most sweets, it's refined sugar, dairy and gluten free and it's packed with good fat's and vitamins and minerals so what's not to love xx A healthy sweet treat without the guilt!

To make the base

10 large fresh dates

1 cup of shredded coconut

1 cup of raw cashews

1 tsp vanilla bean paste

1 Tablespoon of maple syrup

To make coconut layer

2 cups of dessicated coconut

2 tablespoons of melted coconut oil

1/4 cup of coconut cream

2 Tablespoon of maple syrup

To make Chocolate layer

1/2 cup of raw Cacao powder

1/2 cup of coconut oil

1 tsp vanilla bean paste

1/4 cup of maple syrup

pinch of salt

extra dessicated coconut for the top 

Directions

Place dates into a food processor and blend until they start to break down, add the remaining base ingredients and blend until it all starts to come together and is well combined, press base mixture into a silicon slice tray if you don't have a silicon slice tray line a standard slice tray with baking paper and press the base mixture into the prepared tray, pop the base into the freezer, to make the coconut layer place all ingredients into a bowl and mix well, the mixture needs to slightly come together but it wont be stuck well like the base layer, once that is all mixed place coconut layer on top of the base layer and press firmly to compact the coconut mixture well, place back into the freezer until the chocolate layer is made, place all of the chocolate layer ingredients into a blender and blend until the chocolate becomes smooth and everything is well combined, pour the chocolate layer over the coconut and smooth it all out evenly, sprinkle with the remaining coconut and set in the freezer for 2 hour to fully set, take it out and cut into slices, and watch them go :) they can be kept stored in the freezer for up to 2 weeks, but i'll doubt it will last that long it's pretty yummmy :)
