Raw Christmas Snowballs

Ingredients

1 cup of raw cashews, (soaked in water for at least 3 hours)

2/3 cup coconut cream

1 tsp vanilla bean paste

1/2 cup maple syrup

1/2 cup melted coconut oil

2 cups of desiccated coconut (Extra for rolling the balls in)

30 (approx blanched almonds)

 

Directions

 

After the cashews have been soaking, rinse them with water, let them drain well then place in a food processor, process until the cashews resemble rice granule size, add coconut cream, maple syrup, vanilla bean paste and the melted coconut oil and pulse until everything is well combined.

Place the mixture in a large mixing bowl, add the coconut and stir well, place in the fridge to set for an hour, then roll into bite sized snowballs, press one almond into the middle of each ball and re roll into a well formed ball shape, roll the ball into the remaining coconut and place in the freezer to set, repeat process until all the balls are made (approx 30), enjoy xx
