Raw Bounty Cups

Ingredients

Base

1 cup of fresh dates
1/2 cup of pecans
1/2 cup desiccated coconut
1/4 cup cacao powder
1 tbls maple syrup
1 tsp vanilla bean paste

Coconut Filling

1 cup of coconut cream
2 cups of desiccated coconut
1/4 cup of maple syrup
1 tbls melted coconut oil
1 tsp vanilla bean paste

Raw Chocolate

1/2 cup melted coconut oil
1/4 cup maple syrup
1/2 cup cacao powder
1 tsp vanilla bean paste

Directions

Place all of the base ingredients into a food processor and mix until well combined. Press mixture into individual patty cake silicon moulds firmly and place in the freezer (alternative you could make a larger bounty slice and cut into bite sized slices).

Place all of the filling ingredients into a large bowl, stir well until everything is well combined, fill the patty cake moulds up with the coconut mix leaving a small space to top with the raw chocolate.

Whisk gently all of the raw chocolate ingredients together in a small bowl until all of the ingredients are mixed well, top each bounty cup up with the raw chocolate, sprinkle with some extra coconut and place in the freezer to set, approx. 2 hours.
