Pumpkin, Quinoa and Haloumi Patties with a Lemon Pepper Tahini Sauce

So this creation came together on one of those days when there was nothing much left in my house, you know the end of the week just before your shopping is due to be done but you really don't want to do it, or is that just me!! Hehehe, I hate grocery shopping but a girls gotta eat and this creation was honestly birthed on the bits and pieces I had left over from my week, and do you know what??? It's was totally BOOOOMMMM baby!!! Actually it's kinda one of my fav recipes now so lucky I couldn't be bothered that cold winters night to do my grocery shopping otherwise I might not of got creative with some left overs :) That's my excuse for not wanting to shop anyways hehehe!!! Seriously yummmmmm right here :)

Ingredients patties

1/2 cup of cooked and cooled mashed pumpkin

1/2 cup of cooked and cooled quinoa

1/4 cup of buckwheat flour

2 eggs lightly beaten

1/2 cup of chopped haloumi cheese

1/2 cup of spinach chopped

2 spring onions chopped

1/2 tsp sweet paprika

1/2 tsp turmeric powder

1 garlic clove crushed

salt and pepper to taste

Ingredients for the lemon pepper tahini sauce

1/4 cup of tahini

1 tbls of maple syrup

2 tbls of fresh lemon juice

2 tbls warm water

1/2 tsp salt and pepper

Directions

Pretty simple to create, place all ingredients into a large mixing bowl, stir well until everything is all combined and well mixed, heat a non stick pan over a medium heat lightly spray the pan with cooking spray add a table spoon of the mixture and slightly flatten the pattie, cook for approx 1 minute or until golden flip the pattie over and cook until both sides are golden, repeat with the remaining mixture. 

To make the tahini dressing place all ingredients in a small mixing bowl and whisk until it's all combined, you might need a touch more water if it's to thick, serve the patties straight away with a drizzle of the lemon pepper tahini sauce, yep pretty amazing :)
