Protein Packed Breakfast for Champions

Starting the day off on the right foot is essential for weight loss and general health and wellness and you can't go past this plate of amazingness right here! Packed with Protein, healthy Carbs and good fats, every thing your body needs to get your engine running and your metabolism kick started, and it tastes pretty epic too!

Ingredients                                                     Serves 2

1 cup of grated sweet potato

2 whole eggs + 1 extra egg white

1/2 avocado sliced

1 cup of salad greens, (I like rocket for the peppery taste, it goes perfectly with this dish)

1/2 garlic powder

Salt and pepper to taste

Directions

Place grated sweet potato, garlic powder and salt and pepper into a bowl, whisk the egg white in a cup until frothy then pour in with the sweet potato, mix until it's all well combined, divide the mixture into two and form in into a flat patty, heat a non stick pan over a medium heat and lightly spray with coconut oil, place both patties into the heated pan and cook for 2 minutes or until the edges are starting to go golden, gently flip each patty and cook on the other side for a further 2 minutes or until golden, Mean while cook your eggs to your liking, I've just fried my egg in a non stick pan with a little cooking spray but you could poach your egg or even scramble them, what ever floats your boat, arrange your salad greens and avocado on your serving plates gently lift your patties out of the pan and onto the salad and the same with your eggs, sprinkle a little more salt and pepper and ta da, Simple as and everything you need on one plate to start your day amazingly :) Enjoy xx
