Potato, Rosemary and Leek Tart

Simplicity at it's finest, something magical happens when potato's and rosemary meet, it's kinda like a match made in heaven, then add some leek and then you have one of the most yummiest tarts like everrrrrrrr!!! This creation will be the hugest hit with the entire family, It's super simple to create and makes a yummy left over for lunch the next day.................If there are left overs :)

Ingredients

1 large leek sliced

2 potato's finely sliced

4 sheets of filo pastry

8 eggs lightly beaten

2 cloves of garlic crushed

1 tbls dried rosemary

2 tsp salt

Directions

Pre heat oven to 180 degrees, lightly spray a quiche dish with cooking spray, place to filo sheets into the dish making sure all of the dish is fully covered with the pastry, the filo can hang over the dish edges and set aside. In a non stick pan place a little olive oil and add the leek, cook until the leek becomes tender, add the garlic and stir throughly, take off the heat and spoon evenly over the filo base. Beat the eggs lightly, add the salt and rosemary and pour over the leek mixture. Top the mixture off with the finely slice potatoes, sprinkle a little more salt around the edges of the pastry and place into the oven, cook for approx 35minutes or until golden. Serve with a fresh salad or some steamed beans, yummmmmmmm xx
