Pear and Ginger Crumble Muffins

So pears are in season! Yayyy, I love pears and team them up with a touch of ginger and boom you've got yourself an amazing winter combo. Why do I love pears?? Well they taste yum firstly, but they are also one of the highest fibre containing fruits, they are packed with vitamins and minerals and are low in Gi so they are a great snack to control blood sugar levels so great for diabetics. I love this creation because it feels like you are being a little naughty but you aren't Wooo, these are super yum warm and can be kept in the freezer for a sweet treat laters

Ingredients

2 ripe pears finely chopped

2 ripe bananas mashed

3 eggs lightly beaten

1/2 cup buckwheat flour

1/2 cup hazelnut meal

1 tsp baking powder

2 tbls raw honey

1 tbls coconut oil melted

1 tsp vanilla bean paste

1 tsp cinnamon powder

1 tsp all spice

1 tbls fresh ginger grated

Ingredients for the crumble

1/4 cup of rolled oats

1 tbls coconut oil

1 tbls coconut sugar

1 tbls hazelnut meal

2 tsp of ginger powder

Directions

Preheat oven to 180 degrees, line a muffin tray with patty cases or lightly spray a non stick muffin tray with cooking spray, in a large mixing bowl mash the bananas until soft and in small pieces, add the vanilla, beaten eggs, coconut oil and honey and mix well until it's all combined, add the pears and stir well, sift the flour, all spice, ginger, cinnamon and baking powder into the bowl and stir well add the hazelnut meal and give it all a good mix until it's all combined, divide the mixture into the muffin trays, place all of the crumble ingredients into a small mixing bowl stir well and then sprinkle the crumble mix on top of each muffin, place the muffin tray into the oven and cook for approx 20mins or until they are golden on top and cooked through, seriously eat them straight from the oven, well not straight from the oven I don't want you to burn your mouth but these babies need to be eaten warm they taste amazing!!
