Orange, Cinnamon & Dark Chocolate Cookies

Orange, Cinnamon & Dark Chocolate Cookies

Makes 20 cookies

 

Ingredients

2 cups almond flour

High quality Dark chocolate broken into bite size pieces

(I use Green & Blacks organic dark and smooth, it's organic and doesn't contain nasties)

10 Drops of Orange Essential oil (I used Doterra's Wild Orange)

(If you dont have essential use 1 tbls fresh orange juice and 2 tsp finely grated orange zest)

1 tsp baking powder

2 tsp cinnamon powder

2 tbls maple syrup or raw honey

2 tablespoons coconut sugar 

3 tbls water

 

Directions

Preheat oven to 180degrees, line a baking tray with baking paper, In a mixing bowl add almond meal, baking powder and cinnamon, mix until everything is combined, add coconut sugar, maple syrup, orange juice and zest or orange oil and water, stir until a dough like mixture is formed, roll spoonfuls of the cookie dough into small balls, break a small piece of dark chocolate off and press into the middle of the cookie dough and re roll so the dough covers the chocolate, place on the baking tray and flatten slightly, repeat until all the dough is used, approximately 20 balls, and place in the oven to bake, cook for 15 minutes, take the cookies out of the oven and let them cool slightly on the tray until moving them to a cooling rack.

These are super yummy still slightly warm and chewy from the oven, they can be kept in an airtight container for up to a week or kept frozen for up to 3 months.
