Nat's Raw Chrissy Puddings

So it’s that time of year yet again!! Weeeeeee, my name means Christmas so how can’t I LOVE it, What I don’t love is feeling deprived or guilty about eating, drinking an being Merry, too often all our hard work can get washed away in this silly season, So I wanted to share a healthy, yummy chrissy treat that I know you and your family will adore, They make the yummiest lil treats and gifts, who said you can't have your pudding and eat it too, Yayyyy, Merry Christmas from Me to you and your family, I hope Santa spoils you lots xx

 

Ingredients

2 cups of mixed dried fruit

1 cup of almond meal

1/4 cup desiccated coconut

1 tbls coconut oil

1 tsp vanilla bean paste

1 tsp mixed spice powder           

1 tsp cinnamon powder

1/2 tsp ginger powder

1/4 cup orange juice

zest of one orange

 

Ingredients choc coating

1/2 cup coconut oil melted

3 tbls maple syrup

1/4 cup raw cacao

1 tsp vanilla bean paste

pinch of salt

 

Ingredients for white icing

4tbls raw cashews

3 tbls coconut oil

2 tbls coconut cream

1 tbls maple syrup

1/2 tsp vanilla bean paste

goji berries to garnish

 

Directions

In a food processor place the mixed fruit and mix until the fruit starts to break down, add the almond meal, coconut oil, orange juice and zest, vanilla and the spices and mix until everything is well combined and starting to come together, roll the mixture into bite size balls place them on a baking tray coasted with baking and paper and place in the freezer to set for at least an hour, place all of the choc coasting ingredients into a blends and blend until the mixture is smooth and well combined, dip each ball into the chocolate and roll to completely cover each ball, place the coated balls back on the baking tray and let them set for another hour in the freezer, to make the white icing place all of the white icing ingredients into a blender, blend the mixture until everything is smooth and mixed well, it will take a few minutes to combine, once smooth top each ball with a small amount of white icing, add a few goji berries to finish and place back into the freezer until firm. 

So spech and not so naughty so you can enjoy a nice treat this silly season xx
