Nat's Buckwheat Buckinis

BUCKINIS!!! What are buckinis you ask?? Buckinis are essentially buckwheat groats that have been activated dehydrated and turn into a granola like concoction and they are omggggg yummmm!!! I sprinkle these ancient grains of awesomeness every where on top of my yogurt, fruit salads and smoothies, I sometimes add them to salads for that crunchy texture I love and you know what?? I love to eat them straight from the jar No excuses needed hehehe :) So me being me you know I'm eating them more than just because they taste amazing! They are a great source of fibre and protein, they contain loads of vitamins & minerals and best of all they are gluten free so great for your digestion and gut health, then this recipe has the added goodness of some super food super friends to give you even more awesomeness!! So give them a try, this recipe does require a dehydrator but it's totally worth the effort and investment, or your standard oven can be used also, enjoy xx

Ingredients

1 cup of buckwheat 

3 tbls raw honey

2 tsp cinnamon powder

1 tsp ginger powder

1 tbls mesquite

1 tsp maca powder

1/4 cup cacao nibs

1/4 cup goji berries

2 tbls of sunflower seeds

2 tbls pepitas

Directions

Ok firstly you need to activate the buckwheat groats, we do this so they release their protective coating so the our bodies can easily digest and utilise the nutrients from the groats, soak the groats in water over night, in the morning drain and rinse then really well a few times to remove the sliminess, repeat the process by soaking them again for another 8 hrs then rinse and drain well, place the activated buckwheat into a bowl and stir in the remaining ingredients and mix well until its all well coated, set your dehydrator to 40 degrees spread the mix over the dehydrator sheets and dehydrate overnight, if you don't have a dehydrator you can set the oven to the lowest temp leave the oven door open slightly and cook for approx 8 hrs or until crunchy, add the goji berries, cacao nibs and seeds, mix well to combine then sprinkle your lil Buckinis everywhere xx
