So the girl lovesssss her some soups, yup!!!! However sometimes they can take like forever to cook and if you aren't organised then usually there's no soup to be had! Booooooooo, So I've created a very simple yet super delish soup creation that can be made under 30 minutes, Weeeeeee and yet still tasting amazing!!!!
It's jam packed with nutrients, minerals, vitamins, fibre, Iron, folate and great carbs, yummo!!! So not only does it taste amazing it's amazing for you!!!
1 leek sliced
500grams of mushrooms
4 cups of baby spinach
4 cups vegetable stock (choose carefully if you're not making it yourself, for additives etc)
1 tin of chickpeas rinsed and drained
2 cloves of garlic
1 tbls dried thyme
1 tsp salt and pepper
Heat a large pot over a medium heat, add some olive oil and add the leek and soften, add diced mushrooms and cook until browned, add the spinach and garlic and cook until the spinach wilts, pour in the vegetable stock, thyme, salt and pepper, cook until the soup comes to the boil, add the chickpeas and cook for a further 5 minutes, serve hot, yummmmm xx
