Matcha Green Tea Pancakes with Pecans and Grilled Bananas

Omggggg to these!! Seriously my favourite pancake creation to date so I had to share this one straight away, Yes all good things come to those who wait but who wants to wait for pancakes???? These lil babies are packed with antioxidants, protein, good fats, fibre and good carbs. A perfectly yummy way to start your day :)

Ingredients

2 large bananas

 1/2 cup of rolled oats

2 large eggs

1 tsp chia seeds

1 Tbls of Matcha green tea powder

1/4 tsp cinnamon

1 Tbls of almond milk

1/2 tsp vanilla bean paste

 2 Tbls crushed pecan nuts

 Raw honey to drizzle.

Directions

Place oats, 1 banana, eggs, chia seeds, matcha powder, cinnamon, almond milk and vanilla paste into a blender and combine until the mixture becomes smooth, slice the other banana into thick slices, lightly spray with coconut oil and place under the grill or you can cook them in a non stick pan sprayed with coconut oil, cook the banana until golden on both sides, whilst the bananas are grilling heat a non stick frying pan over a medium heat, spray the pan with coconut oil and pour in the desired amount to make your pancake, cook until the batter starts to bubble flip it over and cook until golden and brown, repeat with the remaining mixture, divide cooked pancakes on 2 serving plates, top them off with the grilled bananas, crushed pecans and a little drizzle with raw honey! Ohhhh yeah happy Sunday to you and someone you love, because this serves 2 :)
