Mango and Coconut Bircher Muesli

I love this recipe not only because of it’s taste, but how most of the work is done the night before so it’s ideal for those busy mornings, rather than grabbing something that’s processed or convenient this has everything I need to nourish my body and knowing that I’m eating well especially on those busy days is essential, massive tick right here :)                       

 

Ingredients                                Serves 2

¾  cup of oats

¼ cup greek yogurt (or coconut yogurt for dairy free option)

½ cup of coconut milk

1 Tbls of maple syrup

2 tsp chia seeds

1 Tbls of crushed cashews

1 fresh mango diced

1 Tbls of shredded coconut

 

Directions

 

In a bowl mix yogurt,milk, maple syrup and chia seeds until combined and oats and mix well, add half of the diced mango and leave the other half in the fridge until breakfast, stir the mixture well, cover or place in an airtight container and place in the fridge to set.

Good morning now you are ready to enjoy your bircher muesli, all you have to do is stir it up you might want to add a dash more coconut milk if you prefer it less thick, divide mixture into 2 class or bowls, and top it off with the remaining mango, and sprinkle on the coconut and cashews, how fast and yummy is that? No excuses to run late this morning :)
