Macadamia and Feta Baked Beetroot

Sweet and Salty and ohhhh so amazing, I love beets and I think they are so under used, they are packed with fibre and is one of the richest sources of glutamine, an amino acid that helps to keep your intestines healthy so in other words great for digestion and supports the detoxification process, they help to fight inflammation and are rich in nutrients, But enough about all of that they taste yum so go ahead and bake yourself some sweet beets!

Ingredients              serves 4 as a side dish

3 large raw beetroots

 2 Tbls of Macadamia oil

 Salt and pepper to taste

150 grams of fresh feta, I used danish feta here

6 Macadamia nuts crushed (optional but a yummy option)

Directions

Preheat oven to 180 degrees, line 2 baking trays with baking paper

Cut the beetroot length ways into 1cm size slices and arrange on the baking trays, brush each slice with the oil and sprinkle salt and pepper in to taste, bake in the oven for 15mins flip the slices over and cook for a further 10-15mins or until the edges are crispy and the beets are tender, arrange on a serving plate and crumble the feta around the beets and sprinkle with the crushed nuts.
