Lil Aloha Pancakes

So if any of you know the girl, you'll know she has a few obsessions :)

One the love of Aloha and all of the Hawaiian Wisdom and pancakes!! But not just any pancakes, healthy protein packed, nutrient dense and body lovin kinda pancakes ;)

I'm forever playing with my food and experimenting with flavours, but this creation...... OMGGGGGGGGGG, seriously you guys won't believe me when I say these are healthy because they simply taste to bloody good to be true! BUT you also know that I wouldn't lie to you, EVER!!!! So if you're looking for a something a lil spech to treat the family with on a Sunday morning (Or any other morning for that matter!) Give these Lil Aloha Pancakes a go, Alohaaaaa x

Ingredients                                              Makes 8 medium sized pancakes

2 whole eggs

1 large bananas 

1/2 cup desiccated coconut

4 tbls buckwheat flour or spelt flour (for gluten free use buckwheat)

1 tsp baking powder

1 tsp vanilla bean paste

1 tbls raw honey or maple syrup 

3 tbls of coconut milk

Mango slices, extra coconut and crushed macadamia nuts to serve!

Directions

In a blender, place all pancake ingredients and mix until a smooth batter is formed.

Heat a non stick pan over a medium heat and spray with coconut oil, pour desired amount of batter into the heated pan, cook on one side until air bubbles are formed in the batter, flip over and cook on the over side until golden, repeat with remaining batter until the mixture is all used up, serve on serving plates, top with fresh mango slices, a good sprinkle of desiccated coconut and a a few crushed macadamia and for you sweet tooth's out there maybe a lil splash of maple, I personally think it's sweet enough without extra maple but, each to their own ;)
