Lentil and Veggie Nourishing Bowl with a Zesty Turmeric and Orange Dressing

Nourishing, hella yummoooo and satisfying, weeeeeeee to this epic creation! This bowl of awesomeness will not only be loved by ya'll it's jam packed with nutrients, vitamins, minerals, good fats and great carbs that will have your body doing a lil happy jig, yayyyyy!! Loveeeee loveeeee loveeeee this creation for any meal and that dressing will give your taste buds a lil ka boommmmm, so yummo it will be a hit with the whole family, trust me xx

Ingredients

1/2 kent pumpkin sliced into wedges

1 bunch of kale washed, stalks removed and finely chopped

1 tin of brown lentils washed and drained

1 spanish onion finely diced

2 cups of mushrooms diced

1 clove garlic diced 

1 tsp cumin powder

salt to taste

1 cup of shredded purple cabbage

1 cup of sprouts

1 avocado sliced

1/4 cup pepitas

2 tbls sesame seeds

Dressing ingredients

1 cup of greek yogurt

1 heaped tsp of turmeric 

1 tsp garlic powder

1/2 tsp cumin powder

1 tbl maple syrup

1/4 cup orange juice, 1 tsp orange zest

Directions

Pre heat oven to 180 degrees, place pumpkin wedges on a baking tray lined with baking paper, drizzle lightly with coconut oil and season well with salt and pepper, place in the oven and cook fro approx 30 mins or until golden and tender, to make dressing place all of the dressing ingredients into a small bowl, whisk until well combined, place in the fridge until everything is prepared, in a non stick pan add 1 tbls coconut oil and add the onion, cook until tender, and the mushrooms, garlic and kale and cook until soft, add the salt and cumin and stir well.

To serve get 4 large bowls, place the shredded cabbage and sprouts on the bottom, top with the lentil and kale mixture, layer the pumpkin and avocado on top, finish it off with a drizzle of the dressing and a sprinkle of the seed mix, booommmmmm, enjoy xx
