Indulgent Raw Turkish Delight Cheesecake

So when you need to create something a lil fancy pancy this lil creation will drop them Jaws! I created this for my bears birthday and let me tell you we were both omggggg at every bite! What a better way to turn heads this Christmas time, healthy, raw and best part YUMMYYYY!

Ingredients base

12 large fresh dates

11/2 cups of pistachio nuts

1/4 cup shredded coconut

1 tbls rose water (Can be bought at any good health food store)

1 tsp vanilla bean paste

1 tsp cinnamon powder

1/2 tsp cardamon powder

Ingredients filling

2 cups raw cashews (soaked over night in water)

3/4 cup coconut cream

1 cup raspberries (Fresh or frozen)

2 tsp rose water

2 tbls coconut oil

1/4 cup maple syrup

1 tsp vanilla bean paste

Directions

To make base, place all ingredients into a food processor, process until all Ingredients start to come together and are mixed well. Press mixture firmly into a 6 Inch spring form baking tray, place into the freezer to set.

To make the filling, drain and rinse the soaked cashews, place them into a food processor and process until they resemble bread crumbs, add the remaining ingredients and process until all the ingredients are well combined, take the base out of the freezer and pour the filling over the base, place back into the freezer and let it set for at least 6 hours.

To decorate drizzle with Raw chocolate or a sprinkle of pistachio nuts, or if your like me, a lil bit of both, hehe.... Yummmmo!!
