Hummingbird Muffins

Hummingbird muffins

 

2 cups of almond meal

2 large ripe banana mashed

2 eggs lightly beaten

1 tsp vanilla bean paste

1/2 cup crushed pecans

1/2 cup crushed pineapple (drained)

3 tbls sultanas

1/4 cup coconut sugar

2 tbls melted coconut oil

1 tsp baking powder

2 tsp cinnamon powder

1 tsp ginger powder

 

Directions

 

Preheat oven to 180 degrees, lightly spray a 12 hole muffin tray with coconut oil, in a large mixing bowl add mashed banana, lightly beaten eggs, melted coconut oil and vanilla bean pasted and mix gently until everything is combined, add the pecans, sultanas, crushed pineapple and coconut sugar and fold through, add the remaining ingredients and mix well and gently until everything is well combined, add heaped spoons of the mixture into the greased muffin trays, divide mixture evenly, then place in the preheated oven and bake for approx 15minutes or until golden on top and cooked throughly inside.     Enjoy xx
