Herb Salad with Chilli Salt Roasted Almonds and a Orange and Pomegranate Dressing

Vibrant, nourishing and yummmm, the perfect way to detox the silly season away and still tickle the taste buds! My herb and chilli salt roasted almond salad with a very refreshing orange and pomegranate dressing, is one bowl of AWESOMENESS, jam packed with antioxidants, nutrients, potassium, fibre and a whole load more!  Perfect as a side or just as good as healthy main to rejuvenate the bod! Enjoy xx

Ingredients                            Serves 4 as a side

2 cups of finely chopped parsley

1 cup of finely chopped coriander

1/2 cup of finely chopped mint

1 cup of pre cooked quinoa (Optional for extra protein)

1/4 cup of slivered almonds

1 tsp olive oil

1/2 tsp sea salt

1/2 tsp chilli flakes

1/4 cup fresh orange juice

1 tbls olive oil

1 tbls apple cider vinegar

1/4 cup fresh pomegranate seeds

Directions

preheat the oven to 180 degrees, line a baking tray with baking paper, place almonds, 1 tsp olive oil, sea salt and chilli flakes into a small mixing bowl and stir until well coated, scatter on the baking tray and bake for approx 10mins or until golden, remove from the tray and let cool.

To create the dressing, place orange juice, olive oil, vinegar and salt into a small bowl and whisk until well combined, add the pomegranate seeds and stir well. Place the remaining salad ingredients into a large serving bowl, pour the dressing over and stir well, add the baked almonds, and ta daaaaa, your bowl of nourishing awesomeness is now ready to be enjoyed xx
