Hazelnut, Quinoa and Roast Veggie Salad, with a Herb and Garlic Dressing

Yup, because eating healthy is like sooooo boring right??? Hells Noooooooo, not with this yummy satisfying warm salad. It's one super tasty, super satisfying and super nutrient dense, protein packed meal. Who said you don't make friends with salad????

Ingredients                                                                             Serves 4

2 cups of pre cooked quinoa

1 small sweet potato, cut into bite sized pieces

1 Spanish onion sliced

1 large carrot, cut into bite sized pieces

2 cups or baby spinach 

1 cup of grape tomato's

1/4 cup of roasted hazelnuts

Dressing

3 tbls macadamia oil

2 tbls of lemon juice

1/2 tsp garlic powder

1/2 tsp dried thyme 

1/2 tsp oregano 

salt and pepper to taste

 

Directions

Pre heat oven to 180 degrees, place the sweet potato, onion and carrot onto a baking tray, and spray lightly with coconut spray, bake in the oven for aprrox 20mins or until lightly golden. In a large mixing bowl, add the cooked quinoa, baby spinach and grape tomato's, to make the dressing, put all of the dressing ingredients into a small bowl and whisk with a fork. Take cooked veggies out of the oven and let cool slightly then place into the mixing bowl, stir all of the salad ingredients together until well combined, pour dressing over and mix well, divide the salad into 4 serving bowls, and sprinkle hazelnuts on top just before serving, tots yumms xx
