Hazelnut Protein Balls

Who said snacking can't be healthy and Yummm? I Love these simple protein balls, I've been making them for years and they always are a hit, Serve them as they are or like I've done here as a perfect afternoon treat with some fresh fruit!

Ingredients

1 cup of fresh dates

1/2 cup of shredded coconut

1 cup of hazelnuts

1 Tbls chia seeds

1 tsp vanilla bean paste

1/4 cup of raw cacao powder

2 Tbls maple syrup

1 Tbls maca powder

1/2 cup of hazelnut meal to roll the balls into.

Directions

Place dates and hazelnuts into a food processor and pulse until they start to break apart, add the coconut and pulse until it's combined, add the remaining ingredients (apart from the hazelnut meal) and blend until the mix is well combined and it starts to form a ball, if it isn't forming a ball add a spoon of water, once it's all mixed form the mixture into bite sized balls then roll each ball into the hazelnuts meal, place on a tray and pop them into the fridge to set for approx an hour, So simple and so yummy :) these will last up to 2 weeks in an air tight container in the fridge, but they will be eaten before then trust me, so moreish and perfect for the afternoon attack of the munchies at work!
