Harissa Spiced Beetroot and Black Bean Patties

Some serious meat free magic right here!!!! Want to reduce your meat intake without missing meat, well look no future. Highly nourishing, yummy and super versatile these patties are, I love them and love getting creative on ways to enjoy them. Here are two ways to create and enjoy them!!

Ingredients

1 tin black beans washed and dried

1 small red onion

1 large raw beetroot

2 eggs 

1/4 cup buckwheat flour

1 tsp harissa powder

2 cloves garlic

1 tsp salt

1 tsp cumin

1/2 cup fresh coriander 

Directions

Place all ingredients into a food processor and mix until everything is well combined, heat a non stick pan and add coconut oil, spoon mixture into patties in the frying pan and cook for approx 2 mins or until firm on one side, flip over and repeat until all of the mixture is made.

Serve either as a burger or for a more carb friendlier option, serve with salad, yummmmm either way :) 

On the burger I’ve made a yummy creamy mustard dressing and for the patty alone I’ve made a smoky avocado sauce

Ingredients (Mustard dressing)

4 Tbls greek yogurt

1 tsp salt

1/2 tsp garlic powder and cumin powder

1 tsp olive oil

2 tsp seeded mustard

1 tsp chopped chives

Directions

Place all Ingredients into a bowl and mix well, top each burger patty with the dressing

 

Ingredients (Avocado sauce)

1 large avocado

2 tbls of greek yogurt 

1 tsp apple cider vinegar

1 tsp smokey paprika powder

1/2 spring onion chopped finely 

2 tbls fresh coriander chopped

1/2 tsp garlic powder

salt and pepper to taste 

Directions

In a large bowl, place the avocado and yogurt and mash throughly with a fork until smooth, place the remaining Ingredients into the bowl and mix well until everything is well combined, serve with the patties, yummmmm!!!
