Haloumi and Zucchini Patties with a Sweet Red Pepper and Spanish Onion Relish

DELISH!!!!!!!! In all honesty, I can't describe this creation in any other way :)

So for those of you who've either bought my book "Own It" or know me personally, you'd know that the girl is totally obsessed with Haloumi, in fact book no 2 that I'm working on at the moment has its own lil section celebrating the obsession I have for it :)

So because I'm a sharing is caring Kinda gal, I so had to share this creation with you all, like ASAP!!!!! So here ya go, a lil sneak peek at what's coming for ya in book no 2, Yayyyyy xx

 

Ingredients (Patties)                                                           Serves 4

2 large zucchinis, grated and excess water squeezed out of them 

1 1/2 cups of haloumi cut up into small but chunky pieces

2 eggs lightly beaten

1/4 Spanish onion finely diced

1/4 cup of Almond meal

1/4 cup buckwheat flour

1 tsp garlic powder

1 tsp dried oregano

1/2 tsp salt and Pepper

Ingredients Relish

2 large red capsicums 

1 large Spanish onion

1 clove garlic

1/2 tsp salt

2 tbls maple syrup

1/2 chilli flakes, optional

Directions

Preheat oven to 180 degrees, place the capsicums and on a baking tray and place in the oven, cook for 10 minutes, then turn around, replace back in the oven, slice the Spanish onion and slice the garlic, place onto a baking tray, sprinkle with salt and a dash of coconut oil, stir until it's all coated then place in the oven to cook until golden and caramelised, approx 15 minutes, by this time the capsicums should of blistered, remove the capsicums and the onion mix, set aside to cool, once cooled pull the top of the capsicum to remove stork, seeds and excess water, gently peel the skin away from the flesh, place capsicum flesh on some paper towel to remove any further excess water, once every thing is completely cooled, place all relish ingredients into a blend and pulse until everything is just combined, don't over blend, you want this to still be chunky :)

To make the patties, place all patty ingredients into a large mixing bowl, gently mix all ingredients together until well combined, heat a non stick pan over a medium heat, place a small amount of coconut oil in the pan, form a small handful of the patty mix into a loose patty shape, place in the pan and fry on one side for approx 2 minutes or until firm and golden, flip the patty over and cook for a further minute or so or until golden on both sides, do the same with the remaining mixture until all patties are made.

Serve straight away with a nice spoonful of relish and some salad greens, Yummmm xx
