Curried Spiced Quinoa and Eggplant Fritters

Loveeeeeee me some plant based yumminess, and these epic lil fritters are so full of yumminess, and jam packed with healthy whole food goodness your body will be bouncing with vitality, weeeeeeee!!! I've served them with one of my fav bottled culture fermented creations, love it when people create healthy, simple magic with real nourishing ingredients, yummmm xx

Ingredients

1 large eggplant diced

1 cup of cooked quinoa

2 shallots finely diced

2 tsp curry powder

1 tsp chilli flakes

1 tsp garlic powder

1 tsp salt

1/4 cup spelt flour (use buckwheat flour for a gluten free option)

1/2 tsp baking powder

2 tsp olive oil

2 tbls almond milk

Directions

Heat a large frying pan over a medium heat, add some olive oil and place all of the eggplant in, cook the eggplant until brown, add shallots and cook until soft, remove from the heat and place in a bowl to cool. Once cooled add the quinoa curry powder, salt, garlic, chilli flakes and stir until well combined, add the flour, baking powder, almond milk and olive oil, stir well until the mixture all comes together and is well combined, heat a little oil in a large frying pan, add desired amount of the mixture to form the fritters into the pan, cook for approx 2 minutes or until golden, flip over and cook until golden on both sides, continue the process with the remaining mixture until they are all cooked, eat straight away, any left overs make a healthy quick lunch with salad the next day, enjoy xx
