Crispy Roasted Honey and Black Pepper Brussel Sprouts with Cannellini Beans

Ewwwwwww brussel sprouts, I can hear you haters screaming from here! Hehehehe, but wait a minute have you tried these lil babies?? No No you haven't so stop being a hater of these amazing veggies and give them a try Nat's way ;) They are jam packed with vitamins, minerals dietary fibre, antioxidants and another protein packed veggie for us no meat eaters out there, weeeeee :) Ok to be fair I was always that weird kid that loved them and broccoli and I get why so many people aren't a fan, you've probably had them over cooked to mush, but baking them with a touch of honey and black pepper seriously does them justice, I think even the kiddies will like this creation!

Ingredients

12 large brussel sprouts washed and sliced in half

1 red onion sliced

1 tin of cannellini beans

1 tbls coconut oil melted

2 tbls raw honey

1 tsp salt

2 tsp cracked black pepper

Directions

Pre heat the oven to 180 degrees, lightly spray a baking dish with coconut oil cooking spray, mix the coconut oil, salt, pepper and honey together in a small bowl until well combined, place the sliced sprouts and onions on the baking tray and pour the honey mixture on top, make sure everything gets well coated, I find using my hands to massage it all together works best, place the tray in oven, cook for approx 30mins, or until golden and crispy, stir the mix a few times whilst baking to ensure even baking, add the beans in the last 5 minutes of baking to heat through, serve straight away and enjoy xx
