Creamy Silver beet and Potato Soup

Creamy silver beet and potato soup

 

Ingredients

5-6 large potatoes peeled and diced

1 large bunch of silver beet

(washed, trimmed and diced)

1 large onion diced

4 cloves of garlic diced

21/2 litres of vegetable stock

1 Tin of coconut cream

Salt and Pepper to taste

 

Directions

Heat a small amount of coconut oil in a large pot, add diced onion and garlic and cook until soft, add the vegetable stock and potatoes and bring to the boil, reduce heat and gently simmer until the potatoes are soft, add the silver beet and cook until it all wilts, remove from the heat and carefully mash the soup with a potato masher until everything starts to break down (I like a chunky soup for a smoother soup you can use a stick blender to mix) add the tin of coconut cream and stir through until everything is well combined to your liking, enjoy 😉
