Cracklemint Slice

 

Ingredients

 

3 cups of rice puffs

(Quinoa puffs, Amaranth puffs or brown rice puffs can be used as an alternative)

1/2 cup desiccated coconut

3/4 cup coconut oil (melted)

1/3 cup maple syrup

5 tbls sifted raw cocoa powder

8 drops of peppermint oil

 

Directions

 

Place rice puffs, and desiccated coconut in a large mixing bowl, mix remaining ingredients in a seperate bowl and whisk until everything comes together and you’ve achieved a smooth lump free raw chocolate mixture, pour directly over the dry ingredients and stir until everything is coated and well combined, pour mixture into a silicone loaf baking tray, press the mixture down firmly with a spatula, sprinkle a little extra desiccated coconut on the top to decorate and place in the freezer for approximately 2 hours or until firm, cut into slice sizes and enjoy 😉
