Coconut Mango and Passion Fruit Chai Breakfast Bowls

 

Ingredients                                  Serves 2

2/3 cup chai seeds

1 cup unsweetened coconut milk

(carton not tinned coconut milk)

3 tsp maple syrup

1/2 tsp Vanilla Bean paste

3 tbls desiccated coconut

2 tsp cinnamon powder

1 fresh mango diced

1 fresh passion fruit

 

Directions

Add coconut milk, cinnamon powder, vanilla bean paste and chia seeds into a mixing bowl and whisk until everything is well combined, keep mixing every few minutes then place is fridge to set, overnight is best but approx 2 hours will set.

In your serving bowls place a quarter of the chia seed mixture into the bowl, sprinkle a thin layer of coconut over the seeds and add half of the mango on top, repeat with the remaining ingredients, spoon on the passion fruit and sprinkle with some extra coconut and serve! Yummo 👌👌
