Chickpea and Veggie Biryani on Cauliflower Rice with Herbed Yogurt and Spiced Seeds

I love a good spicy curry, however the typical curries are usually heavy on my tummy with the rice sauces and rice which aren't the best for my body! So I've decided to create a yummy alternative to one of my old time Fav's, The Biryani! Usually a rice heavy dish, but replace the rice with cauliflower rice and BOOOMMMMM, Indian craving satisfied, without the bloated after effect, weeeeee!!! This dish is also a great way to get loads of nutrient dense veggies into your body also, without the kids disapproval hehehehe xx

Ingredients

1/2 head of a large cauliflower 

1 large carrot diced

1 large brown onion 

2 cloves garlic crushed 

1/2 cup diced capsicum 

1/2 cup peas 

1/2 cup diced broccoli 

1 cup chopped coriander 

3 tbls raisins 

1 tbls curry powder 

1 tsp turmeric, salt and cumin powder 

Directions

Break the cauliflower head into small chunks, place them into s food processor and process until the cauliflower resembles rice like consistency, Chop all veggies into small bite sized pieces place all veggies except cauliflower into a large frying pan with one tbls coconut oil, cook until soften slightly, add raisins, garlic and all of the spices and mix well, add the cauliflower rice to the mixture and cook for a further 5 mins or until cooked and well combined, add chopped coriander and serve straight away topping with a good spoon of herbed yogurt and a sprinkling of the seed mix, yummmm

Seed mix Ingredients

1/4 cup pepita, sunflower seeds, flaked almonds and sesame seeds

1 tbls melted coconut oil 

1/2 tsp of each garlic powder, salt cumin and curry powder 

Directions

Pre heat oven to 180 degrees, line a baking tea at with baking paper, in a bowl place all of the seed mix ingredients and stir until well coated, place a thin layer of the mix evenly on the baking tray place in the oven for approximately 10 mins of until lightly browned, remove from oven and let cool before serving with the Biryani.

Herbed yogurt Ingredients

3tbls Greek yogurt 

1 tbls of finely chopped coriander and mint 

1/4 tsp salt

1/4 tsp garlic powder 

1/4 tsp cumin powder 

1 tbl lemon juice

Directions

Mix all ingredients together in a small bowl until well combined, serve on top of the Biryani, enjoy!
