Chia Ginger Nut cookies
Makes 20 cookies
Vegan, Gluten Free, Refined Sugar free and jam packed with protein & good fats, Now that's a cookie you can't turn down!!
I think what I love most about these besides their yummy goodness, is that seriously ANYONE can make them, no prior baking skills required, it literally takes minutes to create just using simple Ingredients, perfect for any time poor cookie monster out there!!
2 cups almond flour
1 tbl chia seeds
1 tsp baking powder
3 tsp powdered ginger
1 tsp cinnamon powder
1 tsp all spice
2 tbls maple syrup or raw honey
2 tablespoons coconut sugar (extra for topping)
2-3 tbls water
Preheat oven to 180degrees, line a baking tray with baking paper, In a mixing bowl add almond meal, chia seeds, baking powder and spices, mix until everything is combined, add coconut sugar, maple syrup and water, stir until a dough like mixture is formed, roll spoonfuls of the cookie dough into small balls, place on the baking tray and flatten slightly, repeat until all the dough is used, approximately 20 balls, sprinkle each cookie with a little extra coconut sugar and place in the oven to bake, cook for 15 minutes, take the cookies out of the oven and let them cool slightly on the tray until moving them to a cooling rack.
These are super yummy still slightly warm and chewy from the oven, they can be kept in an airtight container for up to a week or kept frozen for up to 3 months.
