Chai Spiced Sweet Potato Pancakes with Brazilian Nuts and Coconut Sugar

Pancake Sunday's like a boss!! Seriously yummmmm and with the help of a little "golden turmeric chai mix" From "Our Conscious Kitchen" turns this creation into pure magic! Not only do they taste amazing with the added magic they are amazing for you, jam packed with good fats,good carbs, nutrients and vitamins! Warming your winter up one creation at a time!! 

Ingredients

1 cup of cooked sweet potato (cooled)

1/2 cup of buckwheat flour

1 tsp baking powder

3 eggs

1/2 tsp cinnamon powder

1 Tsp vanilla extract

2 tbls maple syrup or raw honey

2 Tbls "Golden turmeric chai mix"

Directions

Place all of the ingredients into a blender, blend until all of the ingredients come together and form a thick batter, heat a non stick fry pan over a medium heat, spray lightly with cooking spray add a few spoon full of the batter to the frying pan, heat until bubbles start to form around the edges flip over and cook until golden, repeat with the remaining batter. Serve with a few chopped Brazilian nuts and a sprinkle of coconut sugar, Yep amazing xx
