Looking for ways to increase yours and your families veggie consumption, without the complaining???
Look no further, these lil bites of magic are jam packed with goodness, are super easy to create and best of all, no left overs or whinging hehehe!
3 cups of roughly chopped cauliflower
1 tin of chickpeas, (Drained and rinsed well)
1 bunch of parsley
1/4 cup buckwheat flour
1 tsp baking powder
2 cloves of garlic
1 tbls tumeric powder
2 tsp cumin powder
1 tsp ginger powder
Place the chopped cauliflower into a food processor, process until it breaks down into rice sized pieces, add the remaining ingredients and process until everything just starts to come together, don't over blend, texture is still important in the kofta's. Heat a large non stick frying pan over a medium heat, add a little coconut oil, take large spoon full amounts of the mixture and place them into the frying pan in small batches, cook until lightly golden then flip each kofta over to brown on the other side, repeat with the remaining mixture until they are all made.
Serve with a simple salad for a beautiful light meal, I've served mine up with some amazing Indian Lime pickle created by Bottled Culture, Magic :) Enjoy xx
