Looking for some afternoon tea Inspo that will satisfy your sweet tooth, minus all the processed nasties??

I hear ya and I've got your back ;) This Carrot and walnut loaf is the bomb, even if I do say so myself!! Enjoy xx

Ingredients

2 large carrots peeled and grated

3 eggs lightly beaten

1/2 cup unsweetened applesauce

2 tbls Apple cider vinegar

1/4 maple syrup

2tbls melted coconut oil

3/4 cup almond meal

3/4 cup buckwheat flour

2tsp baking powder

1 tsp mixed spice

2 tsp cinnamon powder

1 tsp ginger powder

3 tbls crushed walnuts

3 tbls sultanas

Directions

Preheat oven to 180 degrees, lightly grease a baking loaf tin, in a large mixing bowl whisk eggs lightly then add maple syrup, melted coconut oil, applesauce and apple cider vinegar, stir lightly until everything is mixed together, add baking powder, spices, grated carrot, walnuts and sultanas, stir until everything is mixed then add almond meal and flour, stir until the mixture is well combined, pour into the greased loaf tin, and place in the oven to bake for approximately 35-40mins, or until golden brown and cooked through, let the loaf cool on a wire rack, (just for a little while ;) ) then cut into slices, it's super yummy still warm and will last for approx a week in an air tight container, enjoy xx
