Cacao and Mixed Berry Pancakes

So this lil creation was birthed on a girly day, Yep I was craving sweet chocolatey yums without creating a muffin top to join my cravings. What I love most about cravings it allows me to get creative rather than reach for a chocolate bar that I would of done in the past! So I think this pancake creation is super spech and I think it would make a great morning tea or dessert too so give it a go whenever those cravings strike xx

Ingredients                                       Makes 8 medium pancakes

2 large bananas

1/4 cup buckwheat flour

2 Tbls cacao powder

2 eggs

2 tbls almond milk

1 tsp vanilla bean paste

1 tsp baking powder

1 tbl maple syrup or raw honey

1 cup of mixed berries

1 tbls raw cacao nibs

Directions

In a blender place all of the ingredients apart from the Cacao nibs and berries, blend until everything is smooth and well combined, heat a non stick pan over a medium heat and spray lightly with coconut oil cooking spray, pour batter into the pan to your desired pancake size, cook until bubbles appear than flip over to cook on the other side until lightly browned, repeat with the remaining mixture, serve on a plate with berries and cacao nibs, nothing else needed this is perfection right here and sweet enough, enjoy xx
