Butter Bean and Pea Koftas

Butter Bean and Pea Koftas

1 tin of butter beans (rinsed and drained well)

2 cups of frozen peas (thawed)

1 cup of fresh parsley

1 cup of fresh coriander

1/4 cup bread crumbs (Gluten free Bread crumbs work well also)

3 tbls nutritional yeast

1 tsp salt

1/2 tsp pepper

1 tbls olive oil

2 tbls fresh lemon

2 tsp cumin powder


Place all ingredients into a food processor, blend until everything comes together, scraping the sides of the bowl several times through the bending to ensure everything is well combined (don’t over mix, you still want some texture in the mixture) mould the kofta’s into palm sized sausage like formations, place them on some non stick baking paper and let them set in the fridge for at least 20mins before frying them.

Heat a large non stick frying pan over a medium heat, add a little olive oil to coat the pan, and cook the kofta’s in batches, until golden on each side, serve and enjoy


Fully Tabbouli

1 cup of cooked quinoa

1 bunch of parsley

1 bunch of coriander

3 tomatoes (Deseeded and finely diced)

1 shallot finely chopped

juice of 1 lemon

2 tbls olive oil

salt and pepper to taste


In a large mixing bowl place cooked quinoa, finely chop the shallot, tomato, parsley and coriander and place it in the bowl, give everything a good mix, in a small bowl add the lemon juice, olive oil and salt and pepper, mix until combined, pour dressing over the tabbouli mix and stir well until everything is well combined and coated. Serve with Kofta’s and enjoy.
