Beets in the "RAW" and a Whole lot more Beetslaw

Yeahhhhhh baby, you wanted a kick ass powerhouse of a salad and boooommm Nat delivered just that!! I can't say enough amazing things about it but here goes, I'm talking about nutrients, antioxidants, fibre, good fats, great carbs, vitamins, minerals and naturally finger licking taste! This is why this girl loves her some RAW!!!! You just can't get all that in one bowl any other way, seriously!! Beets and so many other veges are best consumed in their natural and raw state to hold their natural healing properties! This is a bowl of vitality and energy your body will adore!!

Ingredients                                                     Serves 2

1 large beet grated (11/2 cups)

2 cups of kale or cabbage (your choice) shredded

1 large carrot grated

1 green apple (half grated, half sliced thinly)

1 spring onion finely sliced

3 tbls chopped pecans

2 tbls rasins

Ingredients dressing

3/4 cup of coconut yogurt

2 tbls dijon mustard

1 tbls lemon juice and 1 tsp grated lemon zest

1 tbls raw honey

salt and pepper to taste

Directions

To make dressing place all ingredients into a small bowl and whisk until everything is well combined, set aside, place all of the prepared veges, grated apple and rasins into a large mixing bowl, add dressing and mix well until everything is well coated, serve on a serving plate, top with the apple slices & sprinkle over the crushed pecans and enjoy xx
