Baked Pumpkin and Pecan Pie Bites

Trick or treat, Why have one when you can offer both!! Trick the kiddies with this healthy baked pumpkin and pecan pie treats! You sneaky lil Devil you, hehehehe! Soooooo Yummmm the kiddies will never know it's healthy! Weeeeee and it's jam packed with goodness not refined sugars and colourings!! Just Whole and raw goodness! Enjoy xx

Ingredients

1 cup of baked pumpkin     (I bake mine with a spray of coconut oil and a sprinkle of cinnamon, baked in the oven for approx 40mins, then left to cool)

10 large dates

3/4 cup of pecan nuts

1/4 cup dessicated coconut

1 tbls coconut oil

1 tsp vanilla bean paste

1 tsp powdered cinnamon

1/2 tsp grounded ginger

1 tsp mixed spice powder

Directions

Place the pecans and dates into a food processor and blend until broken down, add the remaining ingredients and pulse until well combined and mixed well, roll into bite sized balls and then roll into extra coconut, pop these lil bad boys into the freezer for an hour and boooommm, there's one sneaking li healthy treat for the kiddies that won't keep them cray cray on all that extra sugar and crap this halloween, weeeeeeeeee!!
