Anzac Cookie Inspired Balls

Getting into the Anzac Day spirit! I love Anzac cookies, back in the day I could eat a good few without even blinking, So I came up with this lil creation, to still have a yummy Anzac day treat that tastes super close to the real thing but without all the added junk my body doesn't want or need. This is a fun creation to involve the kiddies in over the holidays so give it a try!

Ingredients

2 Cups of rolled oats

2 Cup of shredded Coconut

1 Cup of Almonds

1 Cup of Brazilian nuts

1/2 cup of honey

1 Tsp vanilla bean paste

1 Tbls coconut oil

1/4 tsp salt

Direction

Heat a non stick pan over a medium heat and place one cup of the coconut into the pan, gentle move the coconut around the pan until it becomes lightly golden and toasted, place the toasted coconut onto and plate and set aside for rolling the balls into. Place Almonds & Brazilian nuts into a food processor and blend until the nuts are broken down, Add 1 cup of the coconut and the remaining ingredients into the food processor and mix until well combined, and 1 tbls of water if the mixture isn't coming together, once the mixture is combined roll bite sized portions of the mixture into balls then roll into the coconut, repeat until all of the mixture is gone, set in the fridge for an hour, enjoy :) xx Yummmm
